Ciabatta Gourmet Sandwich

  • 1 Ciabatta loaf slices in half
  • 2 zucchini
  • 1 eggplant
  • 1 white onion
  • 1 red pepper deseeded
  • 4 tablespoons olive oil
  • Mozzarella ball
  • Season

Start by slicing all the vegetables and place on an over tray, drizzle over the olive oil and season, place in an over at 450g for 15-20 minutes. Meanwhile take the CB and make 4 cut outs on the bottom of the Ciabatta loaf and then the same for the top, Slice the Mozzarella ball into 1 inch slices

Assemble in the CB , the bottom of the Ciabatta, followed by the roasted vegetables, some mozzarella and then the top of the loaf.
